Asian Cucumber Salad

This recipe great by itself, topped with baked tofu, or as a topping on a vegan poké bowl!

My friends will think its crazy I made this salad because I was NOT always a fan of cucumber. I couldn't even drink spa water with it in there... but they say your taste buds change every 7 years so now can tolerate them for the most part! At least enough to know they taste great in this salad!

Asian Cucumber Salad

Ingredients:

2 Large Cucumber

1/2 red onion, sliced

3 small red bell peppers, sliced

3 green onion

1/4th cup chopped peanuts


Dressing:

1/3 cup rice vinegar

1 pinch stevia

1 tsp toasted sesame oil

1/2 tsp red pepper flakes

1/2 tsp salt

Sesame Seeds (Optional)


Directions

1) Whip all dressing ingredients together and set aside

2) Either thinly slice or use spiralizer to make cucumber ribbons

3) Add rest of ingredients to the salad and toss in dressing.

4) Enjoy or refrigerate
