I went on a kick where I was trying to be zero waste as much as possible. Life of course got busy and I didn’t quite have all of the resources and time in place to completely learn how to sustain a zero waste life style but I did develop some eco- friendly habits such as not using paper towels and reducing my packaging by making protein bars using the bulk section and the farmers market.
So this is what I came up with! Berry Berry breakfast bars have simple whole foods ingredients and can be fortified with protein powder
3 cups rolled oats
1 cup almond butter
15-20 dates, chopped
1 cup blue berries (or chopped strawberries)
4 packets of stevia or equivalent sweetener (agave to taste is fine!)
¼ cup coconut oil, melted. Plus some for baking.
1 tsp cinimon
½ tsp vanilla extract
optional: 1 serving your favorite vegan vanilla protein powder, just to fortify them a little. If used you may want to omit vanilla extract and ½ of the stevia.
Preheat oven to 350F
Add oats to a large mixing bowl and pit and chop dates
Sprinkle the dates along the top of the mixing bowl for easier mixing
Add almond butter, stevia, vanilla, blueberries, and protein if using and work thoroughly with your hands until you have an even sticky mix.
Lastly work in the warm coconut oil, this is just to ensure they don’t fall apart. Sparing a little for greasing the pan.
Grease an 8x8 or 9x9 square baking pan with remaining coconut oil and spread the mix to the bottom of the pan.
Bake for about 20 minutes
Allow to cool before cutting into bars and enjoy!
