Buffalo Tofu

I am such a sucker for buffalo sauce. I never had buffalo wings before I was vegan so I really love to mess with it now that I have tasted it's sour spicy goodness. I love making buffalo cauliflower since it was so popular for a while and decided to make this higher protein version using tofu. I love that its baked and I ended up eating leftovers on top a Romain lettuce salad with chopped celery, shredded carrots, and tomato with Daiya ranch dressing! You definitely don't regret making 2 pounds of tofu. If the recipe is too big for you feel free to cut it in half for only one package of tofu!




Buffalo Tofu


Ingredients: 1/2 cup corn starch

2 lbs extra form tofu

3 tbsp olive oil

1/4 cup corn starch

Salt

1/2 cup TOBASCO buffalo sauce

1/4 cup Vegan butter (earth balance), melted

Optional: vegan ranch (Daiya) and celery


Instructions:

1. Preheat oven to 450F

2. Cut tofu in 3/4inch cubes

3. Toss in olive oil, then toss in corn starch &salt

4. Lay on baking sheet and bake for 30 mins

5. Meanwhile, melt butter and whip with TOBASCO sauce 

6. Toss tofu in sauce mix

7. Back in the oven for 5 mins for crispiness

8. Serve with vegan ranch and celery! (optional)
