6 Tablespoons chia seeds.
2 cups unsweetened coconut, almond or cashew milk.
1/2 teaspoon vanilla extract.
1 Tablespoon maple syrup, stevia or sweetener of choice
Toppings-Granola and berries/fruit to layer
OPTIONAL- Vegan vanilla protein powder (you wont have to use the sweetener if you do this, also you might want to add more non-dairy milk accordingly)
Shake up all ingredients except toppings in a container such as a big mason jar or you can pulse in a blender 2-3 times. (but not so seeds are pulverized, just enough to mix evenly.
Store the mix at room temperature for about 4 hours or until it turns into a pudding. (If I put mine in the fridge it gets clumpy but if room temperature freaks you out go ahead and let it thicken in the fridge)
Layer in fruit, granola, and chia milk mix into small parfet containers! Keep in fridge or enjoy immediately!
