Homemade Cinnamon Maple Granola

I am definitely someone who does her best to live a holistic lifestyle.. but I'm not perfect and I have my non-organic cheat days. But when I purchase granola.. I want to add in some healthy extras. So many people ask why I don't just make my own? but when do I have the time? Well, when I got off work it was 1pm and all I wanted was granola.. So today I went to Whole Foods, probably spent a little too much money (buying other stuff i didn't need, HA!).. and created this delicious and nutritious granola.


This recipe is gluten free, vegan, and packed with antioxidant!


HAYLEY'S CINNAMON MAPLE CRUNCH GRANOLA


Ingredients:

  • 5 cups gluten free rolled oats

  • 1 cup chopped walnuts

  • 1 cup chopped almonds

  • 1 cup chopped dried cherries

  • 1/2 cup chopped and shelled pistachios

  • 1/2 cup unsweetened coconut flakes

  • 1/2 cup goji berries

  • 1/2 cup flax seed

  • 1/4 cup chia seed

  • 1/4 cup raw cacao nibs

  • 2 teaspoons cinnamon

  • 1/2 cup melted coconut oil

  • 1/2 cup maple syrup

  • 1/2 tsp vanilla extract

Instructions:

  1. In a large bowl mix all dry ingredients (everything except maple syrup and oil)

  2. In a separate bowl mix maple syrup, vanilla extract and melted coconut oil

  3. Pour both dry and wet ingredients together and mix well until dry is completely covered by maple syrup, vanilla extract and coconut oil

  4. Spread mixture on a large baking pan (I like to line with parchment paper and avoid a larger mess)

  5. Bake at 300 degrees for one hour. Thirty minutes in to baking, take out and stir, than return to oven for duration of cooking time.

  6. Allow granola to completely cool (about an hour to two hours)

  7. Serve and enjoy!

If you are like me, you will enjoy making a big batch so you can do some meal prep for breakfast! I made 12 small containers and like to eat with coconut yogurt! The rest I place in a tightly sealed zip lock bag and freeze! It will last several months!
