Mighty Green Flatbread

So im in So Cal.. and its a million degrees.. and I still had to turn on the oven for. this. flat bread. I just really like it! Mostly for the sauce, which sneaks in a whole bunch of kale by the way.



I have to admit though I didn't hang out in the kitchen making dough while that thing was heating up. Pictures have store bought vegan wheat pizza dough, but I've done it both ways so what ever is clever for the weather I recommend you do! Hope you like it as much as I do!



Ingredients:

Crust-

Buy vegan wheat pizza dough OR make this

Dough-

1&1/2 cups whole wheat flour, plus extra for dusting

¼ tsp sea salt

1 tbsp extra virgin olive oil

½ cup warm water

Sauce-

1/4 cup nutritional yeast (more for garnish)

1 bunch kale, stemmed

1/2 cup water

1 cup raw cashews

1/2 cup olive oil1 bunch basil

1/4 cup hemp hearts (more for garnish)

2 big pinches salt

Toppings- 

1 head broccoli, chopped (just the tops)

3 leaves kale, destemed and chopped

8 baby heirloom tomatoes 

Pine nuts

Red onion

Artichoke hearts

Pepper (for garnish)

Instructions: 1.Preheat oven to 425 ( or if you used store bought dough what ever package says)

2.Mix crust ingredients and food into a dough, adding water last and slowly working it in

3.Let the dough rest for about 10 mins, covered

4.Add the sauce ingredients to blender and blend

5.Roll out the dough over floured surface into a thin crust and bake for about 3 -4 mins

6.Remove from oven and flip it over and add sauce and other toppings Bake for about 7-8 more minutes until crust is golden 

7.Garnish with pepper, hemp hearts, or nutritional yeast if desired!

Note- You will probably have left over sauce!
