Peanut Stir Fry

This might kinda remind you of padthai… like a 5 minute easy version of pad thai.. Lol. It's one of many recipes that I make using only frozen, dried and canned goods! I always wanted to make a cooking ebook using only food that will not spoil for those that want to cook for themselves but you know, it doesn't always happen. After all, frozen fruits and veggies are just as healthy as if not more healthy than fresh! Anyway, I have been working on a series of recipes full of foods that you can always have on hand incase you are in a pinch, and LOW AND BEHOLD. 2020 gives us the biggest fucking pinch….the COVID-19 pandemic! So naturally I’m putting my online classes on the back burner and serving my country by showing them the many ways this plant-based bitch knows how to make beans and rice! And obvi pasta… here ya go!


Ingredients

Sauce:

1 pt sriracha

1 pt teriyaki

1 pt soy sauce

1 pt peanut butter

Add ingredients to a bowl and heat it up in the microwave for 20 seconds so the peanut butter will soften.

Whip until fully mixed

Stir fry:

Noodles of choice (I used wheat linguini)

Frozen Asian Vegetables

Oil for cooking

Sauce from above

Salt

Optional: Peanuts, red pepper flakes

Instructions:

1) Make noodles according to package

2) Stir Fry vegetables in a large pan (like too large) with some cooking oil and a pinch of salt.

3) When veggies are fully cooked, turn off heat and toss in pasta and sauce to the large pan.

4) Serve immediately, topping with peanuts and red pepper if desired.
